During the holidays, my family prepares a Spicy Breakfast Casserole that will be baked the morning of. This Thanksgiving, we will assemble the breakfast casserole so that we can easily feed everyone the next morning before the busy prep of preparing the big meal of the day. This Spicy Breakfast Casserole feeds 8-10 people and only requires putting it in the oven and cutting into pieces after it bakes. You can eat it hot, warm, or even room temperature, so you do not have to be in a hurry to gather everyone around the breakfast table. Casseroles are a great way to use up the ingredients you have leftover as well as make a tasty dish.

Thanks for Giving Breakfast Casserole
3-4 cups leftover bread (I prefer French baguette or biscuits, but any kind will work)
1# spicy sausage 3/4 cup diced peppers, any color works fine
8 large eggs (or 6 XL) 3/4 cup diced onion
2 cups whole milk 2 cups shredded Cheddar cheese (any kind you like)
1 1/2 tbsp flour 1 tsp dry mustard
1/2 tsp Tabasco 1/2 tsp black pepper
1 tsp salt salsa and sour cream, optional for topping
tomato, diced, optional for topping
Spray 13×9 baking dish with non-stick spray. Set aside.
Crumble bread into small pieces over bottom of prepared baking dish. The bottom should be well covered.
Cook sausage in a skillet over medium heat, breaking up clumps while cooking. Blot excess grease if desired. Toss in diced onions and peppers. Cook until sausage is browned.
In a mixing bowl, whisk eggs, milk, salt, dry mustard, Tabasco, and flour together.
Spoon the sausage mixture over crumbled bread in baking dish. Top with shredded cheese. Pour egg mixture over the cheese. Squish mixture by putting a piece of waxed paper over the top and gently pressing down. Cover the entire dish with foil. Refrigerate overnight.
When ready to cook, remove the casserole from refrigerator and let it come to room temperature for 30 minutes. Preheat oven to 350 degrees Fahrenheit. Uncover the casserole and bake it for 45-60 minutes, checking to see that the eggs are set before removing from oven.
Allow the casserole to stand 5 minutes before cutting. Top each piece with diced tomatoes, salsa, and sour cream, if desired.
