Having lived in Charleston, West Virginia for the majority of my life, I know my Mexican restaurants. My family found our favorite one 12 years ago that we dined at least twice a week, sometimes even more. But that all changed the first time I dined at Plaza Maya, located in the old Chesterfield House building across from the CAMC Memorial Hospital.
Plaza Maya employees greet you at the door and are always ready for your business. Chips and salsa are promptly delivered to each table. The salsa has really good flavor; not too much cilantro or too much tomato. On my first visit to West Virginia this year, I managed to eat lunch at Plaza Maya 6 days out of my 12 day stay. How is that for convincing?
My favorite dish at Plaza Maya is the Pollo Asado (chicken with grilled onions), served with rice, beans, and tortillas. The chicken tastes like that of good quality and has a nice depth of flavors. The onions offer a bit of sweetness and are grilled to perfection. Of course our Mexican meal would not be complete without an order of spicy cheese dip. The recipe at Plaza Maya is divine and always the right consistency, often a problem at other restaurants. I like to drizzle a bit across my chicken and rice as well.
When I dine here with my husband or parents, they always choose chicken fajitas and they, too, are incredibly flavorful. Fajitas come with sautéed peppers and onions, warm flour tortillas, and a side plate with pico de gallo, shredded lettuce, diced tomatoes, sour cream, and guacamole. I am a huge fan of their tasty, well seasoned rice and beans, which are paired with the fajitas.
It is only fitting that I crown Plaza Maya my favorite Mexican institution in all of Charleston and look forward to my visits “home” to dine there. It is a great place, full of vibrant colors and decorations, to meet up with friends, celebrate special occasions, and just hang out for margaritas and chips & salsa. Have you tried it yet?
