Tater Tot Breakfast Casserole
I love breakfast food. I could eat pancakes and bacon for every meal. Nothing makes me angrier than when someone insists bacon can only be eaten in the morning. No, bacon is just as good at midnight as it is at 9AM. I promise!
If you know me, you know that I am a creature of habit; I cook the same five meals over and over. In an attempt to expand my kitchen skills, I have been trying out new recipes that I find online. I even made a Pinterest recipe binder!
I found this Tater Tot Breakfast Pizza recipe on Pinterest. Since I do not have a cast iron skillet, I made mine a casserole and I cut the recipe in half. Also, since I do not eat sausage but my husband does, I made my Tater Tot Breakfast Casserole half bacon and half sausage. It worked out perfectly!
- 1/2 of a 30 oz. bag tater tot crowns
- 1/4 Tablespoon vegetable oil
- 3 Eggs
- 1 cup cheddar cheese, shredded
- 1/2 cup crumbled bacon, cooked
- 1/2 cup crumbled sausage, cooked
Preheat oven to 425 degrees F. Line the bottom and sides of a casserole dish with tater tots, after spraying it with cooking spray. Bake for 15 minutes.
While baking, heat the oil in a skillet over medium heat. Whisk together the eggs, salt and pepper. Cook the eggs just until they are set.
Remove tater tots from the oven and use a spatula to press down on them in an attempt to smash them a bit. Top with 1/2 cup cheddar cheese. Add the eggs, remaining cheese, sausage, and bacon. Bake for 10 minutes.
The Tater Tot Breakfast Casserole fell apart but it sure was tasty!
Note: The next time I make this Tater Tot Breakfast Casserole, I am going to cook my tater tots a little bit longer in the beginning. I like for them to be crunchy and they were very soft.
Confession: I made more than 1/2 cup of bacon to put on the casserole, so I could eat it 🙂
