Barber Foods Stuffed Chicken Breasts

FYI: One Chicken Cordon Bleu patty is 260 calories—not bad for a breaded item and especially one this tasty! You can tell that Barber Foods uses high-quality chicken and hand stuffs them with quality ingredients. Being a previous restaurant and catering company owner, this is very apparent to me. Barber Foods are found in the frozen aisle of Walmart or your local grocery store where you go for gourmet packaged meals, typically at eye level. For my busy travel schedule, it is nice that they don’t have a quick expiration date to meet. The chicken goes from the freezer into a 375° preheated oven for 31-33 minutes for preparing one to two pieces. This one will start to ooze out on the top but don’t worry, this just makes the cheese brown and adds to the yumminess factor of it.
We make these stuffed chicken breasts for lunch or dinner, they are perfect for either.
Easy Chicken Cordon Bleu Pasta Dinner
When my stuffed chicken breasts have about 15 minutes left to bake, I heat a pan of water to cook some thin spaghetti or whatever noodles I have on hand. Be sure to salt your cooking water.
Once the water boils, I add my pasta to the pan and cook according to package directions. If you have frozen peas or spinach on hand, toss in a handful or two. This is a great way to add more flavor, color, and incorporate healthy veggies without even really noticing. I then drain my pasta/veggies and set them aside.
In a skillet over medium heat, I add about 2 TBSP butter and 3 TBSP olive oil (this does not have to exact). Then, I sauté some garlic, either freshly sliced or the minced kind I usually keep in the refrigerator, in the heated oil. I stir in about 2 TBSP of grated Parmesan cheese and 2 TBSP fresh Parmesan cheese. If you do not have both cheeses on hand, use double the one that you do have. No worries. Add salt and pepper to taste and a few shakes of dried basil, if desired.
Stir the pasta noodles into the sauce. Ladle the noodles onto a plate, then slice the chicken cordon bleu into four pieces, making sure it has cooled 2 to 3 minutes to make sure the filling doesn’t seep out. Lay them across each bed of noodles and top with arugula for a nice top of freshness and color. Then…dig in!
Suggestions: Sliced mushroom and diced onion would have been great to add at the same time as the garlic.
