Fiesta Ranch Dip
My husband (Blake) is a nurse, so he works on Christmas. To do something for the holiday, his unit opted to have a Christmas Day Fiesta. Blake and I got on Pinterest and looked for something that he could contribute. When he saw a picture of Sweet Little Bluebird’s Fiesta Ranch Dip, with Hidden Valley Ranch Dressing, he was sold.
After baking numerous treats to send to his unit on Christmas Eve, the last thing I wanted to do was spend another full day cooking. Luckily, this Fiesta Ranch Dip takes all of five minutes to put together. Plus, it consists of ingredients that most everybody loves.
- 1 packet of Hidden Valley Dip Mix (Fiesta Ranch flavor)
- 10 oz. can of Rotel Tomatoes (drain excess liquid)
- 16 oz. sour cream
- 1 cup shredded cheddar cheese
In a medium bowl, mix all ingredients. Chill the ranch fiesta dip in the refrigerator until ready to eat. Serve with tortilla chips or vegetable sticks. Carrot chips are delicious with it!
Notes and Tips for Recipe
I topped my Hidden Valley Fiesta Ranch Dip with a little bit of extra cheddar cheese to make it look better. I also put my dip in a Christmas Pyrex dish to go with the Christmas Fiesta theme.
When I went grocery shopping, my Kroger was out of original Rotel tomatoes (thank you holiday bakers). I ended up buying Chili Fixin’s Rotel tomatoes because I refuse to shop anywhere other than Kroger, and did not want to drive across town to another one. These tomatoes are seasoned for chili, so they are pretty spicy. It gave my Fiesta Ranch Dip a lot of extra kick. If you like spicy dishes, you may want to try these, too! If not, ignore my picture and buy a can of original Rotel tomatoes.
