Refreshing Grape Salad Recipe: Two Ways

1 to 2# red seedless grapes (or 2 1/2 cups)

1 to 2# green seedless grapes (or 2 1/2 cups)

8 oz reduced-fat cream cheese, softened

1 cup light sour cream

1/3 cup sugar

1 1/2 tsp. vanilla or 2 tsp. honey ginger white balsamic vinegar (alternate orange-ginger version)

3 Tbsp. brown sugar

1/2 cup chopped nuts of your choice

(alternative orange-ginger version crumb topping)

1/2 cup crumbled Anna’s orange Swedish thins

1/4 cup chopped pecans

Instructions

In a small bowl, mix sour cream, sugar, softened cream cheese, and vanilla until combined and creamy. (I use a mixer, but not required) Pour cream mixture over the two kinds of grapes and gently fold together until the grapes are coated. Refrigerate until chilled and ready to serve.

In a small bowl, combine chopped nuts and brown sugar. Cover and store until ready to serve.

To serve, pour crumb topping over grapes.

 

Notes

A second variety of this dish, is to omit the vanilla flavoring and replace with 2 tsp. honey-ginger white balsamic vinegar. For the crumb topping, combine the crumbled orange thins with chopped nuts and top when ready to serve. The taste is a little more exotic and less sweet. I love them both equally.

I find Anna’s Swedish thins (cookies) at Publix and Big Lots. The flavored vinegar was one I picked up at a local store in the Shenandoah Valley. I love browsing the fun olive oil and vinegar stores, then end up buying them with no clue of how to use them. This was my first time testing the honey ginger variety, and it was a delicious combination.
