Refreshing Watermelon Salad Recipe with Fresh from Florida
I’m so fortunate to live in Florida with an amazing year-round selection of fruits and vegetables. Most every kind of produce that I use in my daily cooking is available every month of the year and tastes wonderful each time. When I go grocery shopping at our local Publix store, I make it a habit to look for Fresh from Florida produce, which isn’t marked up due to a middleman, has the freshest taste, and supports local farmers.
Fresh From Florida: A Trusted Name
For those of you not familiar with Fresh from Florida, it is the hallmark of local businesses. It belongs to a group that is organized and run by the Florida Department of Agriculture. They actively help promote farmers, ranchers, seafood fishermen, aquaculturists, and horticulturists through various social media platforms, marketing, industry trade shows, and more.
Since it is important to me to buy local, I look for the Fresh from Florida sign when stocking up on my weekly goods. I would much rather support people in my local community or state.
Cooking with Watermelon?
Is watermelon on your shopping list this season? Often, my local grocery store takes the work out of peeling and cutting fruit by doing it for me and having it in ready to go in plastic containers. This week, those containers of watermelon were buy-one-get-one. The whole watermelons (Fresh from Florida) were huge and running about $12 each, so they offered this BOGO at the perfect time.
Besides eating a slice of watermelon, did you ever consider using it in a side dish? For our spring and summer cookouts, one of our favorite side dishes is this Watermelon Salad recipe. It is super refreshing, easy to throw together, and wonderful for sharing with family and friends. Though there are several variations of this satisfying side item, here is my favorite.
Watermelon Salad Recipe with Basil, Mint & Feta
4 cups watermelon, cut into 1″ chunks
4 oz. crumbled feta cheese
1/2 cup fresh basil, roughly chopped (optional)
1/3 cup finely chopped fresh mint
1/2 diced red onion
1 1/2 Tbsp. balsamic or red wine vinegar
2 Tbsp. extra-virgin olive oil
Juice of one lime
1/8 tsp. both salt and pepper
Cut watermelon into bite-size pieces. In a large bowl, whisk together olive oil, vinegar, lime juice, and salt & pepper. Add watermelon, red onion, mint, and basil, then crumble feta on top. Gently stir together.
Serve cold or at room temperature. I love to drizzle my portion with balsamic glaze when ready to eat. Yum!
